
Turkey Thigh scarpariello & sweet pots gnocchi
The scarpariello is a traditional Italian American sauce.
This one takes a little longer than the typical recipes we feature, however several meals
can be cooked at the same time and saved or frozen for quick meals

Ingredients:
Bone in turkey tights, sweet potatoes, gnocchi, cranberry, walnuts, pickled pepper, white vinegar,
1 medium egg, 2 tablespoons of flour, Parmigiano Reggiano cheese, 3 ounces of water,cornstarch,
fresh sage and Italian parsley, sea salt black & cayenne peppers,

Cooking direction
The turkey thigh:
season with sea salt & black pepper and place in a baking dish covered with aluminum foil
in the oven at 375° until the internal temperature reaches 165°F for 20 minutes.
the foil will speed up the cooking time and keep the meal moist for crispy skin after cooking
place the meat under the broiler for a minute or two.
The sweet potato gnocchi,
bake a sweet potato skin on, when cooked mash it add one egg and flour mix and shape the dough into dumplings place them in boiling water when they float are cooked, scoop them out in a dish.
The Scarpariello sauce
use the dripping in the baking dish, add the cranberries, pickled peppers, and walnuts stir
on high flame until the cranberry blister, about 2 to 3 minutes add the vinegar and water
and bring to a boil and thicken with the cornstarch
Use half of the sauce to toss the sweet potato gnocchi and parmesan cheese a dash of
cayenne peppers the other half, pour it over the turkey thigh.
