
Stracciatella Romana with spaghetti
Stracciatella is a classic roman soup.
Made with good chicken stock, a fresh egg,
grated pecorino Romano pinch of chopped parsley,
a little lemon juice, about one quart of a teaspoon, and salt & pepper to taste.
I add thin pasta like broken linguini, spaghetti angel air, or fettuccine for a heartier version.

Note: I make chicken after I roast chicken, whole, drumsticks or thighs,
using the pan dripping and adding the bone with the skins and cartilage for collagen.

also, make a vegetarian stock chock full of nutrients using onion and garlic skins
