NY Strip Skillet Roasted

NY Strip & Potatoes for $3.75
8 oz of USDA Choice boneless loin beef
five days wet aged.
NOTE: it is best to take the steak from the refrigerator to bring it to room temperature.


Cooking & Timing 
Skillet-Roasted in a hot stainless steel skillet
for flavorful crust and juiciness 
and 4 oz boiled, then slices potatoes seared in the beef fat.
Seasoned with sea salt, freshly ground black pepper,
EVOO and lemon drizzle.
rub the skillet with the steak's fatty edge
as the fat will melt place the steck on on side  for 3 minutes do not poke it or move it, 
then flip it and add the pre-boiled sliced potatoes to blister in the steck fat.

turn the potatoes once add salt and black pepper 
remove the steak & potatoes from the skillet into a plate 
add in the skillet 2 oz of water, one tablespoon of Extra Virgin Olive Oil, and the lemon juice
to make a sauce, spoon it over the meat & potatoes and serve.
Total time 15 minutes - cleaning one skillet
