
Broccoli Soft Eggs & cheese
A simple and nutritious dish from central Italy dish
The broccoli rabe:
Are sauteed in olive oil and garlic; I add a pinch of cayenne pepper after the garlic gets golden and salt when done cooking.
Then add the washed broccoli rabe with some water still on, cover, and cook until tender turning them once in a while.
For the eggs:
Bring the water to a boil for the eggs, then immerse them and cook for 6 or 7 minutes drain and place them in cold water to stop them from cooking.
I place two slices of about three oz. of whole milk hard mozzarella cheese.
make an appetizer or,
balanced lunch with a cup of soup
or light dinner with a bowl of soup
Note: The broccoli rabe can be substituted with broccoli florets or other greens.
Use the same cooking style as it will keep the most nutrients in the food.
